SHIRAZ!!!
While studying for the WSET 2 exam, we tried some really fun Australian wines, including these two Shiraz’s!
I preferred the Dead Arm Shiraz as it was more balanced, but found both very enjoyable with Steak. The salt in the steak cut the acidity in both wines, and it was remarkable!

Affinamento:botte grande di rovere francese e americano per 12 mesi.
Gli altri due vitigni li ho spiegati in due post precedenti,manca solo la Touriga Franca :anche questa una delle principali uve usate per la produzione del Porto: e’piu leggera e profumata della Touriga National,dona finezza al vino.

La Valle del fiume Douro è forse la più affascinante del Portogallo, dal punto di vista paesaggistico.
Io purtroppo non ci sono mai stata,ma solo a vedere i video e le foto ne sono rimasta affascinata.
La pendenza elevata delle anse che costeggiano il fiume,hanno costretto ad edificare dei terrazzamenti vitati delimitai da muri ( socalcos ).In epoche più recenti sono stati sostituiti da bastioni di terra a gradoni (platanares) ed e’ uno spettacolo meraviglioso guardarle in video,non oso immaginare dal vivo.

Questo vino si presenta di un rosso rubino profondo.Al naso intensi profumi di frutta matura a bacca nera: mora,mirtillo,prugna.Note speziate:noce moscata,tabacco dolce,anice stellato.Ma una su tutte prevale:un gradevole sentore di ginepro.
Al palato e’ caldo,morbido,ben equilibrato,tannini fini.Fresco,richiama il frutto e le spezie ma quest’ultime in maniera minore rispetto all’olfatto. (E questo per me e’positivo senno’ lo avrei trovato troppo “piacione”).
Bella persistenza.

P.S: la Valle del Douro e’ stata una delle prime zone vitivinicole al mondo ad essere certificata di qualita’.( 1756).

The only ever so slightly bubblier side of Chardonnay. Vintage Selosse is a rare breed but it always leaves quite an impression, typically outperforming the lieux-dits although in that category the BdB’s also tend to stand out. Bright citrus and orchard fruits hovering between the fresh and dried types, wilting white flowers with enough ripeness and acidity to relegate the oak and oxidative notes to cameo appearances. Fairly cathedralic in its built although not as dramatically composed as the bigger-than-life 1998 that literally blows you away and in the process made the normally perfectly fine Krug 1998 next to it taste diluted and light.
Who ever said you need pinot for body in a Champagne? Chardonnay all the way 😊

Wir produzieren unseren Bio-Sekt komplett von Hand. Das heißt die Flaschen werden per Hand gefüllt und anschließend findet die (mindestens) neun Monatige Flaschengährung statt. Um den dabei entstehenden Rohsekt ohne Trübung von der Hefe zu trennen.
Durch das "Rütteln" sinkt bzw. rutscht das Hefe lager zum Flaschenhals hinunter ohne dabei aufgewirbelt zu werden.
Wenn der mehrwöchige Prozess des täglichen Rüttelns vorüber ist wird der Hefepfropf beim Degorgieren "abgeschossen". Anschließend erhält der Rohsekt sein Dorsagelikör (zur Einstellung der Süße) und wird mit Rohsekt aufgefüllt, verkorkt und erhält seine Agraffe (das Drahtgestellt, welches den Korken fixiert). .

Crisp lemon, grapefruit and pear on the palate with hints of blossom towards the finish. Hey and it looks good too.

Deep red in colour, strong nose of earth, leather and tobacco, all mixed with powerful black fruits; tannins soften by age but still keeping the grip. Looong finish. Rare.
For all my friends out-there who were wondering what’s up with the wine-geek language (and probably haven’t been with me for dinner in a long time), allow me to make a little disclaimer - I study wine.
I’ve been passionate about wine for many years, but more recently I also started to study it properly, looking to pass my first international sommelier certification exams in a couple of months.
So please bear with me from now on, as I’ll start sharing on this platform and practicing the introduction of wines by-the-book: look, smell, taste, think (elaborating a conclusion). I’ll post here only what’s worth it and I have actually drunk. My mission is to put the pure joy back in the wine enjoyment and only promote the genuinely good. Fun fact - did you know that the French macarons were created here because they had extra quantities of egg whites since they used the yolks to clean/ filter the wine? The macarons started to be manufactured here as early as 1620 by a religious community, the Ursulines. The recipe was passed down through local families, and generation after generation is still a secret held.

У нас и ассоциация с Италией какая? 🍕 Пицца 🍝 Паста 🍷 Вино
И там у всех уже свой список. У кого-то это горячие мужчины, у кого - море, модная одежда, язык, Венеция,оливки... ✨
Мы все привыкли думать, что итальянцы пьют вино литрами. Держа бокал в своей загорелой руке и болтая о всем на свете. ✨
Какое жалкое у нас понятие... ✨
1. Они не пьют, в значении котором понимаем мы. Это может быть всего бокал за вечер.
2. Вино всегда качественное и вкусное.
3. Они на самом деле его обожают.
И правильно делают! 😍
Почему же полезно пить вино?
