Let me tell you about my best friend 🥑 My love for avocado toast grows more and more every day. It’s funny to think that I spend the majority of my life hating avocado because of the color 🙈 I was a weird kid okay, I’ll admit it! My current breakfast situation is a vegan breakfast burrito, and some avocado toast. It’s delicious but I do miss my own cooking. So i thought I would share my go to, quick breakfast. Just simply 2 slices of @foodforlifebaking Ezekiel bread toasted up, with mashed avocado on top, and some everything but the bagel seasoning 😋 And sometimes I add some red pepper flakes for some spice! My boyfriend is working till late this afternoon so I’m pretty much on my own. I’m planning on catching more z’s cuz ya girl is tired and still on west coast time 😅 Other than that we plan on spending our last night meeting up with some of my family and just hanging out. I hope you all have a beautiful Saturday 🌻

How good does this look? Pistachio Rose Cardamon Nicecream by @nutriholist 🍦 Recipe:⠀
1 cup pistachios + 1/4 cup for topping⠀
1 and 1/2 cups coconut milk⠀
1 ripe avocado⠀
1 small banana⠀
1 cup packed spinach⠀
1/2 cup dates, pitted⠀
1 tablespoon rose water⠀
1/2 teaspoon ground cardamom⠀
How to make:⠀
Add 1 cup of the pistachios plus the rest of the ingredients to a blender and blend until smooth⠀
Pour the mixture into a 5″x 7″ parchment paper-lined container or loaf pan and freeze overnight⠀
Remove from the freezer and let thaw for about 15 minutes or longer (depending on the temperature) until soft enough to scoop. Top with the reserved pistachios and enjoy!⠀
NOTE: If you want it super creamy and ready to serve right away, break it into chunks with a knife and re-blend in a high-power blender until smooth.⠀

Today's Velvety Hibiscus Oats with caramelized bananas 🍌🔥🌺 toasted cashews and blooming with taste from the @pureleaf Hibiscus tea. I love the punch of flavor and color this hibiscus added to my oats, all crafted from organic ingredients!⠀
For the oats:⠀
1 cup of gluten-free oats⠀
1 cup of coconut milk⠀
1 tbsp. of root beet powder⠀
1/4 cup of @pureleaf organic hibiscus tea⠀
Optional: maple syrup to taste⠀
How to make:⠀
Mix the beet powder, hibiscus tea and coconut milk, add to oats and soak overnight.⠀
For the glazed goodies:⠀
Lightly heat 1 tbsp. of coconut oil, dip the banana slices in maple syrup or coconut sugar and roast on pan until golden.⠀⠀
Next roast the cashews for 2 minutes until golden.⠀⠀
Last roast frozen or fresh blueberries and raspberry for 30 seconds.⠀⠀
Assemble bowl and serve with a heaping tbsp. of creamy ol' nut butter.⠀⠀

I’ve been told to avoid potatoes because of many reasons...some consider them a grain, they feed Candida, they’re a night-shade 🤷🏼♀️ The truth is potatoes, in their whole form, don’t cause health problems. The other ingredients served with them do! - - - > butter, ghee, cheese sauce, sour cream, the frying process, those create a fat/sugar combo that is harmful and feeds disease. It wasn’t until I stopped topping my potatoes with ghee or tossing them in a bunch of oil that I was able really enjoy them! Here I have my favorite way to enjoy them : cut up in fries, no oil, @primalpalate BBQ seasoning and baked! 😋
Just wanted to show you guys a bomb meal I made myself before I went to Boston! 😋 I like to call this one the Spicy Peanut bowl! It has all the nourishing veggies, power grains, and a delicious spicy peanut sauce to cover the whole thing. Here’s what I did: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀
1. I first cut all my veggies. I then tossed them in a little @chosenfoods avocado oil. I popped them in the oven and baked them at 375 F for 20 minutes
2. While that was happening I marinated some cubbed tofu in sriracha, sesame oil, and coconut aminos. I then set them in the oven and baked them for 30 minutes at 375 F flipping them halfway through.
3. Next I sautéed some mushrooms.
4. For the sauce: I mixed together sesame oil, sriracha, peanut butter, water, and garlic powder until smooth.
5. Time to assemble!
6. Portion yourself some @traderjoeslist brown rice mix, some sriracha tofu, zucchini, peppers, mushrooms, subbed some avocado. I then finished everything with everything but the bagel seasoning and red pepper flakes.
No weekend is started properly without a trip to the Farmers Market. I usually stock up on grass fed meats, eggs, some fruit and lots of veggies and herbs for the week. If you live in Orange County you probably know there is no place like Irvine Farmers Market👩🏻🌾👨🏽🌾🥬🥦🍓

My personal favourite - smashed avocado 🥑
When I catch up with one of my besties, we usually always choose a cafe that we love or try a different cafe, providing they have a satisfying menu online 😜
We sit there staring at the menus confused as to what to order, acting like we didn’t just stalk their whole menu the night prior 🤣 The waitress or waiter comes to the table, “would you like to order?” We look at each other knowing exactly what we want... “Ahhhhh I don’t know yet, ahhh smashed avo!”
Smashed avo gets me every time. How could it not when it looks this good? @mochajos .
Tip - avocado on toast on its own is not a balanced meal, as there is no source of protein, therefore add a poached egg or two and you’re good to go.

I’m upping my health game these days.
I’ve been on antibiotics four times this winter already. My body catches every little thing that comes my way.
I’m finally ready to fight back. I’m going to be super human or something when I’m done.
This means upping my #bulletproofcoffee game with #mctoil. Taking alllllll the supplements, vitamins (especially the Bs) and minerals. And loading my morning protein shake with even more “health stuff.”
I’m ready for a change. I’m making the change.

These 5 Ingredient Banana Muffins from @pinchofyum are gluten-free, refined sugar-free and oh so delicious! Great addition to any weekend meal prep 😋
2 cups oats
3/4 cup pitted whole dates
1 teaspoon baking soda
not necessary, but I usually toss in a pinch of salt and cinnamon if I have them around
not necessary, but chocolate chips are also an added plus👌🏼
1. Preheat oven to 350 degrees.
2. Grease a muffin tin.
3. Mix all ingredients in a blender or food processor until smooth.
4. Pour batter into muffin tin (you should have enough for 10-12 standard size muffins). Top with chocolate chips if you want.
5. Bake for 15-20 minutes. Store in the fridge for up to 3 days.

Nothing like a crisp chip and some roasted red pepper hummus! Most people don't know this, but I'm a chip fiend. Stress? Chips please. Hormonal changes (you know the ones)? Chips please. Hungry at the grocery store? Chips please. It verges on uncontrollable if I don't separate conscious, rational thought from feeling and desire.
HOW DO I FIGHT THIS?
I plan ahead and have support. My partner Dan is not afraid to smack them out of my hand or have a throwdown with me at the grocery store. We make sure we have healthy snacks available such as trail mix, dips with veggies, healthy homemade goodies, and protein/nut and seed bars for when we are in a bind. I try not to go to the store hungry and resort to other stress management tools, such as working out. Food doesn't have to be an outlet if you don't let it be.
