Special thanks to my friend @lostinwines for this Louis Bouillot, Dessus les Vermonts, Blanc de Noirs 2005. It was outstanding, like you said! Throughout history, Louis Bouillot 🍾 has truly developped an understanding and an expertise of Crémant de bourgogne. Dessus les Vermots 2005 is a careful blend of wines from the same plot located over a rocky limestone vein in the village of Savigny-lès-Beaune. Everything was put in place to make the most of the terroir and truly show the plot's identity. This limited edition had only 4500 bottles produced and you won't find many vintages.

When we think of Entre-deux-mers, we mostly think of the vibrant white wine production. However, this historical trend is starting to switch in recent years. The clay-Limestone which is the basis of the terroir is actually very suitable for red wine production, especially merlot. The only problem is that the AOC laws dictate that all wines labeled Entre-Deux-Mers AOC must be white. Reds get bucketed under the more generic Bordeaux or Bordeaux Supérieur designations making it impossible to understand their true nature. Château Peyfaures is actually one of those estates taking pride in the quality of this Terroir. Situated in Génissac, the estate is just a Dordogne river away from St-Émilion, which explains some similarities in the soil, in the blends and in the style.

It’s so great it didn’t even feel like work! ♥️
Taittinger Champagne Brut Cuvée Millésime 2012 👑 This Champagne Millésime is the perfect balance between Chardonnay and Pinot Noir. It is not so famous because it is flattened between sans année and cuvée de prestige. 👉🏻 This Champagne is produced with Grand Cru grapes from great vintages and rests on its yeasts for at least 60 months. Excellent, delicate and elegant Champagne.

@sallys_paddock is producing cracking wines in this cracking location. Just look at that view of the Pyrenees wine region. We are so lucky to call Western Victoria home and all that it has to Eat Drink West.
