Former CEO of Tyson, Tom Hayes, who stepped down last September, also believes in the plant-based future of meat. The company first invested the California-based vegan meat company Beyond Meat in October 2016. In December 2017, Tyson upped its takes for an undisclosed amount.

This evenings meal was veg with a little pasta and @lindamccartneyfoods meatballs with passata, ate all the veg, bit of pasta was too full to even eat half of the meatballs....

This has to be just one of the greatest meals ever. Sweet potato curry over rice with all of the toppings (crushed peanuts, hard boiled eggs, raisins, coconut flakes, and bananas) and @wholefoods southwest salad mix (I add avocado and more pumpkin and sunflower seeds!). Two of my favorite things on the same plate 😍 My version of the curry recipe is further back in my pics. This is the original recipe, which is more calculated and has butter, sugar, and flour that I don’t use. Both are delicious!
Have you taken advantage of citrus season? Did you know Egypt is starting to become a serious player on the international citrus market? We are pretty good at growing oranges and tangerines and the likes, but most of the best fruits are exported. We believe we should have access to the best locally, too. The wraps we made for the beach were equally as good in the sunshine of the back yard! I filled mine with spicy hummus, thinly sliced zucchini, broccoli slaw, salt, and a little olive oil.

We didn’t succeed at finding beach parking, but we got some tasty ice cream @orangeoctopusicecream and sat in the sun of the parking lot eating it 😄 I had the key lime and toasted coconut. So. yummy.

A little strawberry Greek yogurt with muesli and #hempseeds to start the day off right! It’s tasty and oh-so-filling, but always check ingredients: muesli and yogurt have many, and I overlooked a couple I should have skipped, and could have if we’d checked the brands.

I want this again and again! Mom had @traderjoes Indian daal (easy to heat in bag—though we made some extra lentils to thicken it up and mixed them together) and frozen paratha. It’s so much better than the majority of takeout Indian I’ve had (I mean, outside of India) and it’s all warm and perfect 😍

The boys and I were trying to waste time in Times Square on a Friday night. Not my favorite thing to do. But! We finally saw the new Spider Man movie, which is pretty fun, and had dinner @doscaminos . I had a chile relleno, which was delicious, but I was too full of popcorn to really enjoy it. The littlest one fell asleep in his chair, though, so, all in all a great place to pass some time 😄

Sometimes you need a break, and my break was brought to me by a falafel burger @friedmansnyc . I’ve had tzatziki cravings like woah and this. was. so. good. Plus, I got a side of mac and cheese for eating later 😍

Artichokes and lentil soup! We’ve had lentils on the brain since we failed to get it the other night. The soup is so simple: sautéed onions, garlic, carrots, and celery, add lentils, thyme, veg stock, and if you’re feeling it, veggie dogs (we were). S&p and simmer until lentils are soft. #yum The artichokes are so easy it’s bonkers: boil in salted hot water for 15-20 min until soft and serve with mayo jazzed up with fresh lemon juice and a splash of hot sauce!
