Enjoy your evening, my dears! 😘
Hi guys, so my boyfriend and I wanted to make a picnic but it was raining yesterday. So we made another attempt today but once we arrived at the lagoon we saw an injured bird. 😢 His wing was caught up in some kind of root or something. My bf was able to help him, however unfortunately the bird can't fly anymore, I assume his wing is broken. We realized that he has no chance to survive when we leave him there, so we took him home. He is now in the transport box of our cat Ginger. We gave him some water and seeds and tomorrow we will go to the vet. Let's hope he will recover 🙏
This is one of my favourite quick and easy dinners that requires simple ingredients. Not to mention that it’s super cosy and flavourful! I’ve included the recipe below for anyone that wants to give it a go (and I would totally recommend it!) ☺️. Happy weekend everyone!
1 clove garlic, minced
1/2 small onion, chopped
150g (around 2 cups) mushrooms, chopped
1/2 small zucchini, chopped
1/2 can coconut milk
2 tsp curry powder
1/2 tsp cumin
1/2 tsp garlic granules
1/2 tsp turmeric
1 tsp arrowroot powder
Salt and pepper to taste
Rice or noodles to serve
Sesame seeds to serve
Add the garlic and onion to a non-stick frying pan and cook for 2-3 minutes. Add the mushrooms and zucchini and stir for few minutes more, until the mushrooms cook down. Then, add the coconut milk, curry powder, cumin, garlic granules and turmeric. Bring to a gentle simmer and cook on a low-medium heat for around 5 minutes, stirring frequently, before adding the arrowroot powder and stirring for a further 2 minutes to allow the curry to thicken. At the last minute, season to taste with salt and pepper and add the spinach. Serve immediately with rice or noodles and sesame seeds.

Even though I do like the patties that you can get in several places (like beyond meat, tofurky and others) I'd take a homemade burger any day instead of those brands.
Easiest thing in the world. I'm not really good when it comes to measurements, but it goes something like this. - 1 can of black beans
- 1 cup of shredded carrots
- 1 medium onion
- Paprika, onion powder, garlic powder, sea salt, chili powder, ginger powder (just a sprinkle for the kick). - Vegan American cheese
Have you guys tried this 😍?? It’s vegan& healthy& delicious and about $3 from @traderjoes . I throw it in the microwave for 1 1/2 minutes and take it with me on the go. Fills me up and leaves me happy🥰🌱

Easy cheesy vegan popcorn 🍿 This stovetop method is my favorite to make perfect, aka NOT BURNT, popcorn. FULL recipe below and on my blog 😋 https://www.karissasvegankitchen.com/cheesy-vegan-popcorn/
* 2 tsp cooking oil
* 1/2 cup popcorn kernels
* 2 tbsp nutritional yeast
* 2-4 tbsp vegan butter
* salt to taste
1. In a large pot, add in the oil and 3 popcorn kernels. Turn the heat to medium-high.
2. Once the 3 kernels have popped, remove them from the pot and add in the remaining popcorn kernels.
3. Cover the pot and remove from the heat for 1 minute. Shake the pot a few times.
4. Put the pot back on the heat. Shake frequently (every 15-20 seconds or so).
5. After a couple of minutes, you’ll hear the popcorn start popping. Keep shaking. Remove from heat when the popping slows down. Keep the lid on!
6. Once the popcorn stops popping, it’s ready to get cheesy!
7. Add in the nutritional yeast, salt, and vegan butter. Give it a good toss to coat the popcorn. Alternatively, you can season the popcorn with dill, garlic, vegan parmesan, etc.
Notes: This method of cooking popcorn was adapted from @thepioneerwoman. To make oil-free popcorn, I recommend using an air popper (search on Amazon) and just using nutritional yeast and salt to flavor.

Tofu taco salad!
First dry the tofu for about 20 minutes then I coated it with a combination of flour, chipotle powder, and salt. I pan fried the tofu for about 8 minutes on each side on med-high heat (or until golden brown). Under the tofu is bell pepper slices, fresh pico de Gallo, and fresh guacamole!
Stuffed Quesadillas: purple potatoes, soyrizo, purple onions, avocado, black olives, and @daiyafoods cheddar cheese with a smokey chipotle sauce smothered on the tortilla. So good! Inspired by the vegan quesadilla @tocayaorganica 😋😄❤️😁

Fry off chorizo, onion, courgette, capsicum and garlic (could add mushroom too!)⠀
Make four little wells and crack an egg in each.⠀
