Harcha or (حرشة) is the name given to the Moroccan semolina cake. Its sandy and friable appearance give it a particular taste. The dough is mixed a little like Makrout dough and can be cooked in a mini galette, whole or punched. At the end of cooking, it can be coated with honey and butter to accompany a coffee but can be enjoyed as is for breakfast or with a good tea. The version prepared with semolina with olive oil is more intended to accompany a salty dish, it is the one found most often on the tables of Ramadan at the break of the fasting.
