LOVE the glassware! . . . 처음 맛보는 Gosset-Brabant 향이 아주 좋네요! 많이 보이는 샴페인 하우스 Gosset의 Gabriel Gosset가 자기 스타일만의 샴페인을 만들고 싶어 만든 와이너리 입니다. (네 RM 생산자입니다) 의도적으로 이 두 샴페인을 같이 글래스 와인으로 파는건지는 모르겠지만 볼랭져 하우스 바로 앞 길건너 이 Gosset-Brabant가 있다고 합니다. . 볼랭져야 뭐 워낙 유명한 샴페인 하우스라 큰 설명이 필요없겠지만, 매그넘인데다 이미 오픈한지 좀 된 것을 마시니 더욱 더 맛있게 마셨습니다!

  • It’s been a while without tasting some Nuits-Saint-Georges wines. We made a statement this time with that NSG 2015 1er Cru Les Chaignots from Domaine Georges Mugneret-Gibourg. Georges Mugneret purchased those parcels in 1971, limestone soils essentially. Around 50% of grapes have matured in new oak barrels. Really charming deep red color. This is directly on the fruity and floral side for the first nose, becoming herbal. Juicy strawberry, raspberries, redcurrant and floral bouquet covering the all approach. This is already complex, this might be decanted at least 3 hours before. This is already pure and fine, with some spices and lots of generosity for that 15’ vintage. Crispy palate on the entry, with red berries, this is sweet and sexy. Medium-bodied, more chiseled and focused, with some mint notes. In general, it didn’t really come alive for the tasting, deserves 5 years to enjoy as it could be. Acceptable amount of tannins, with elegancy, lively finish.   • 1976 Dujac Morey st Denis - recent release from the domaine. Really lively red berries on the nose that gives way to some brown sugar and damp earth. Palate was clean and with great finesse of pretty red berry. Really really wish the sommelier didn’t completely shake up the whole bottle after the first pour as it became a Herculean effort to drink this wine while filtering the chunks of sediment through my teeth.

But still, this wine took me to the happy places. 2012 is the last vintage of the legendary wine maker Mr.Bob Cabral - love his wine.   • Torii Mor, Deux Verres Reserve, 2005. Whoa! This is a total ANIMAL wine. Nose: I want to say it’s leather or tobacco, but it’s more musty animal. No, not the terrible “wet dog”. Instead it’s like some kind of funky meat with animal musk. That, and sea air smells: seaweed, and rotting stuff laying on the beach. All in the best way possible. It’s magically intriguing. All that, and hay, dust and spice. The nose is (to push the pun) intoxicating. Taste: leather and animal — that, and muted red cherries. Medium body. The finish is super long: pie cherries and baking spices. Man, this wine is crazy good.   • Nas últimas postagens abordei o assunto da oxidação do vinho e do uso de sulfitos como conservante. Além do esforço de enólogos para diminuir o SO2, também existem outras inovações, só que não no vinho mas na fabricação de rolhas de cortiça. A empresa francesa Diam Bouchage é um exemplo de empresa que produz e comercializa rolhas com garantia total da vedação e afirma nunca ter tido problemas com produtos danificados pelo seu uso. Diamant foi o nome de um processo de pesquisa iniciado em 2000, com a finalidade de produzir rolhas de cortiça que evitassem ao máximo a contaminação, explorando as propriedades do CO2, eliminando o indesejado Bouchoneé. Para minha surpresa a descobri ao abrir o vinho Hugel, mas o Willian Fevre, Bouchard, Louis Jadot e o Jean Paul & Benoit Droin também adotaram essas rolhas com resultados positivos. De negativo ouvi que o Champagne Jacquinot decidiu não usar, pois considerou que a vedação excessiva alterou o sabor. Nos produtores australianos e neozelandeses não foi bem recebida, há boatos de que encontram TCA nelas também, além de perceberem a perda de vivacidade nas garrafas e notas de cola no vinho. Temos que entender que lá a maioria prefere usar tampa de rosca, apesar da resistência dos clientes que geralmente preferem a tradicional rolha de cortiça.
