  • Sweet, crunchy and nourishing peanut butterbean bowls are one of my favourite things to eat! A selection of roasted and raw veg, grains and beans, this dish checks all the vegan boxes ✅ With a bigger bowl, some more leafy greens and tossed together it also transforms into a salad. ♡ 1/2 cup cooked quinoa ♡ 1 medium sweet potatoe ♡ 1/2 cup sliced raw red cabbage ♡ handful each of chopped cherry tomatoes, spinach and tenderstem broccoli ♡ 1/2 cup butterbeans ♡ 1/2 cup peanut satay sauce (recipe coming soon!!) ♡ cracked black pepper and pink himalayan salt to garnish 
Slice the sweet potatoe into wedges, drizzle with oil and roast at 180°C until soft on the inside and crispy on the outside. Meanwhile boil the quinoa and butterbeans according to package instructions. Put the broccoli into a bowl with a little bit of water and microwave for 2 mins to lightly steam it. Once all the cooked components of the meal are ready, assemble the bowl with all the ingredients. Drizzle the peanut sauce over the butterbeans or over everything if you prefer. Garnish with cracked black pepper and pink himalayan salt and enjoy! 🍜

  • Being organized is something I’ve struggled with my whole life. I use a student planner to keep track of daily tasks and appointments, I find the larger pages give me enough room to write everything down. I keep a journal to talk about my day and my thoughts and feelings, even if it’s just with myself. I keep a health planner to track my diet, my workouts and my progress; and a wellness planner to make sure I honor myself daily with meditation and self-care. And I use stickers, because I’m a little kid; and also because I deserve encouragement and recognition for my accomplishments. How do you stay organized? 🤓📝📚
