A simple picture of a village lane in Welford, which lies on the border of #Northamptonshire and #Leicestershire •
Because of its position between the two and a route to London, it used to be prominent as a coaching stop during the 17th and 18th centuries. Some of the houses on the High Street are old coaching inns and are named appropriately.

When there’s too much belly pork for your tacos el pastor what ya gonna do....well make Chinese of course! Chat Sui style sticky pork with a special fried rice is just what I needed for a speedy dinner tonight. I know the rice recipe isn’t the most traditional as it includes smoked sausage but hey it works for me so why the hell not. Hope you’ve all had a fantastic start to your week!
•2 Slices of Belly Pork (skin remover), cut into bite sized pieces
•1tsp Five Spice
•1tsp Ground Ginger
•1tsp Chilli Flakes
•2tbsp Tomato Purée •3tbsp Soy Sauce
For the Rice:
•150g cooked Rice
•100g Smoked Sausage, cut into small chunks
•75g Frozen Peas (Cooked with the Rice)
•125g Chestnut Mushrooms, diced
•1 Carrot, grated
•2 Spring Onions, sliced
•1 Garlic Clove, minced
•1tbsp Soy Sauce .
•Combine all of the ingredients for the sticky pork sauce, combine with the pork.
•Heat 1tbsp oil in a frying pan and cook the pork on a medium heat until crispy and golden, set aside.
•In the same pan add the Mushrooms and Smoked Sausage and cook for five minutes, before adding the Spring Onions, Carrot and Garlic, cook for a further minute.
•Push the mixture to the side of the pan and crack both eggs into the centre of the pan and scramble whilst cooking.
•Once the egg is cooked add the rice, peas and sauce sauce and mix together to combine and heat through, serve in a bowl and top with the pork...enjoy!
