🍌🥞👉🏻 mash 1 banana. Mix in 1 egg and dash of vanilla. Fold in 1/4 cup quinoa flour, 1tsp baking powder, dash of salt and cinnamon. Fold in chocolate chips if desired. Makes 4 pancakes!

Lemon-Blueberry Sour Cream Cake 🍋🍞
Oh. My. Goodness. This cake. 😍😋🤩 Earlier this month @dianemorrisey shared a Lemon Glazed Yogurt Cake on her feed/stories and I knew I wanted to give it a try, but I didn't have yogurt on hand. So, I made a few adaptions...and it’s perfect.
This👆🏻is actually the second loaf we've made in less than 2 weeks. 🙈🤷🏼♀️😋 See our modified #recipe below. And be sure to check out @dianemorrisey for so much more food goodness. She’s crazy-talented and I’m so glad I found her through @nocrumbsleft (another kitchen wizard and beautiful woman).
WHAT YOU NEED:
🍋 1 and 1/2 c flour, 2 tsp baking powder, 1/2 tspn salt, 1 c sour cream, 1 c sugar, 3 large eggs, the zest of 2 lemons, 1/2 tsp pure vanilla extract, 1/2 c vegetable oil, 1/2 c lemon juice, 1/2 c to a cup blueberries plus another tbsp or so flour
🍋 For simple syrup/glaze you will need equal parts sugar and #lemon juice. I used 1/4 c (optional)
HOW YOU MAKE IT:
🍋 Preheat oven to 350 degrees and line a loaf pan with parchment/spray with cooking spray. Set aside.
🍋 Sift together flour, baking powder, and salt into one bowl.
🍋 In another bowl, whisk together sour cream, sugar, eggs, zest, and vanilla. Slowly whisk dry ingredients into wet.
🍋 Next, fold oil into the batter, until well-incorporated. Set aside.
🍋 In a small bowl combine blueberries and just a tbsp or so of flour. Toss berries until lightly coated. Then, slowly fold blueberries into batter.
🍋 Pour batter into prepared pan and bake for about 45-50 min, until cooked through and golden.
🍋 While cake cooks, make simple syrup (if desired): on stovetop combine and heat lemon juice and sugar in small pan until sugar dissolves and mixture is clear. Set aside.
🍋 When cake is done, spoon mixture over cake. Allow to cool.
🍋 Sprinkle with additional lemom zest, and/or top with Whipped Lemon Ricotta (instructions on @dianemorrisey’s feed). Enjoy! 😊

Now, to find out where we are moving in a week👀 or let’s make it two. Next week, we’ve decided to be nomads, visit family, live out of our car...who knows! Our sense of adventure is continuously being tested, and I dig it, and I think Kojo does, too🐺 I am just so thankful that I can do the majority of my work from my laptop and iPhone. Thinking we should just buy an RV 🤷🏽♀️
Also, I’m putting together a ‘Travel Guide’ for Rehoboth Beach. I figured it would be fun to do one for each place we live-- to reminisce on, and provide recommendations for those who want to visit!

This is what most lunches or dinners look like for me: an indecisive plate of real food thrown on a plate or into a bowl! I always make sure to have fresh cut veggies ready to be roasted or sautéed so I can come home, and easily put a bowl of plate together. This is how I like it most. This is practical. Nothin fancy or too complicated. Just a lot of color and real food. Simple and easy does it, now you chill💆🏼♀️🌱 Pan fried chicken tenders, pan fried yellow squash, red peppers, roasted acorn squash, and avocado rose with black sesame seeds, and lots of fresh dill. The simplest local brekkie ever, but it sure did hit the spot. The eggs came straight from a sweet friend’s coop, and the yolks are so vibrant and perfectly runny! I topped it with a big spoonful of spicy farmers market salsa for a kick of flavor and some #sneakyveggies. Washed it all down with some green ginger tea and a bit of local raw honey 🍳 🌶 🍵 🍯

Did you know that Green Tea is good for Type 2 diabetes? Nothing like hot tea in this cold weather.
Are you a tea drinker? There are literally hundreds of different kinds of teas you can drink – from green to black to herb and fruit concoctions – and each has their own unique benefits and flavors.
This week let’s experiment with trying new teas!
First, a little primer about the different kinds of tea. There are two basic kinds: traditional and herbal.
Traditional teas (ex. green, black, white, and oolong) are packed with antioxidants, including ECGC, which studies show might help protect you against free radicals that can lead to cancer, heart disease, and clogged arteries.
Because they contain caffeine, traditional teas help you feel mentally alert. And because they also include theanine, an amino acid that helps you relax without feeling tired, tea isn’t apt to give you the jitters the way coffee or energy drinks can.
Green tea – the least processed tea – has the most EGCG. Studies show it might improve fat burning, prevent clogging of the arteries, interfere with the growth of a wide variety of cancers, improve brain health and cholesterol levels and reduce the risk of stroke.
Black tea has the most caffeine. It’s been shown to reduce the risk of stroke and might even protect your lungs from damage caused by cigarette smoke.
White tea contains powerful anticancer properties, and oolong tea might help to lower LDL (“bad”) cholesterol.
Herbal teas haven’t been as widely studied as traditional teas but, depending on the blend you choose, they can help with everything from soothing your stomach, easing you to sleep and cutting inflammation.
Popular blends include chamomile, ginger, rooibos, and ginkgo biloba.
