  • Saturday night girl talk... can that be a thing? 💁🏼‍♀️
I told y’all that I was going on a date this morning and so many of you have messaged me asking about dating apps, good dates, bad dates, red flags, courage to start dating... the list goes on! I like sharing my dating life with y’all (the good, the bad, and the ugly 😂) I’d say that one of my greatest #nsv that has changed my dating life is finding self-worth. It has taken me a lot of bad dates, failed relationships, a lifestyle change, and taking care of ME for ME to realize certain things. The relationship you have with yourself is the most important one 💛
If you could go back and give yourself dating advice, what would it be? 👇🏻

  • Zoodles with fresh made pesto, cast iron grilled chicken, sauteed mushrooms, and tomato slices.

I struggle with chicken... especially grilled chicken. Years of dieting will do that to ya! It also didn't help that I was always paranoid about it not being cooked through, so I'd cook it to death.
.
But over the last few years, I've perfected my cooking method. I absolutely love my cast iron pans. They rarely leave my stove because I use them practically for every meal. Medium heat, a little bacon grease or olive/coconut oil, and 7 minutes on each side covered with foil while it cooks. Then let rest under foil for 10 minutes. It comes out perfectly cooked & juicy every single time.

I've really been playing with spices and herbs too. Turmeric is my newest favorite! I find most of my inspiration from watching the food network. I've been obsessed with watching cooking shows my whole life. If you watch close, for the most part, the chefs use whole foods, made from scratch.

Pesto was made with fresh basil, garlic, pine nuts, fresh lemon juice, olive oil, salt and pepper.

  • Today I turned all of this, into this!

It was a bit of an emotional experience for me (thanks, perimenopause). My little four cup food processor just wasn't cutting it and my mood has been a bit off the past couple of days (thus, the maca). After a little decompressing, hubby and I made a trip out and picked up a much needed new food processor (a Ninja Ultra Prep, on sale at Target....very cool). And just like that, all of these superfoods were turned into delicious energy bites!

  • I have an obsession with Mexican food!! I haven’t tried anything that I hate! .

I love finding quick, easy and healthy recipes to make myself. I can control what I put in them so I’m not eating unnecessary things. Here is a healthier version of taquitos. They are one of my fav foods to make on game day. .

What you’ll need:
1 lb chicken breast
2 tablespoons olive oil 
1 medium onion, diced 
2 tablespoons dark chili powder 
1 tablespoon cumin 
1 teaspoon garlic powder 
1/2 teaspoon kosher salt 
1/2 teaspoon black pepper 
1, 10 oz can diced tomatoes with green chilies drained 
1-2 cups cheese (you can use as much as you’d like), a mixture of Cheddar and Jack
Avocado oil for brushing the tops
about 18 small soft tortilla shells I used corn shells
Sour cream, chopped scallion, salsa and hot sauce for the side

Preheat oven to 400.

Heat olive oil in large pan. Add onion and saute until soft and translucent, about 6 minutes. Add chicken and Cook throughly. Once cooked shred chicken. Out back in pan and add chili powder, cumin, garlic powder, salt and pepper and mix together well coating the chicken with the spices.  Add drained tomatoes and green chilies and mix together well to incorporate all ingredients, about 2 additional minutes.  Spoon the chicken into a large bowl and stir in your cheese until well combined. 
Cover soft tortilla shells or corn shells with a damp paper towel (6 at a time) and place in the microwave until pliable 
Take yourtortilla shells and spoon about 2 tablespoons of the chicken mixture onto the shell. Roll up lengthwise and end seam side down. Continue with remaining tortillas. 
Place taquitos seam side down in a pan (or one lined with parchment paper). Brush the tops lightly with avocado oil. Bake until crisp. ENJOY!! 😋

  • I finally decided that I NEED to prep food for the week. If it's not ready to go, I am more likely to eat something I shouldn't! I have meals planned and snacks prepped for the week!
