Blackened Shrimp Avocado Burrito Bowls are the perfect way to ring in the New Year with big bold flavor and a healthy meal! These are packed with blackened shrimp, brown rice, corn, black beans, and avocado. They are also great for meal prep!
Serves: 4-5
INGREDIENTS:
1 pound large shrimp, peeled and deveined
1 Tablespoon Chili Powder
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon cumin
½ teaspoon garlic powder
1 teaspoon salt
¼ teaspoon pepper
2 Tablespoons olive oil, divided
1 can corn
1 can black beans
2 cups brown rice, cooked (I used a brown rice quinoa blend)
2 avocados, sliced
Greek Yogurt Avocado Cilantro Ranch:
1 avocado
¼ cup chopped cilantro
¼ cup greek yogurt
1 garlic clove
3 Tablespoons olive oil, add more for smoother consistency
½ teaspoon salt
¼ teaspoon pepper

CRISPY BREADED CHICKEN W/ SIDE SALAD
Servings: 2
—> Ingredients:
✖️2 chicken breast
✖️1/3 cup @germinal.organic Tomato and Tumeric crackers (blended to fine powder)
✖️1/2 tsp Italian seasoning
✖️1/2 tsp paprika
✖️1/4 tsp salt
✖️1/4 tsp Black Pepper ✖️1/8-1/4 tsp cayenne pepper
✖️1 egg
✖️1/2 tbs Coconut oil
—> Directions
1. Blend the cracker until you get a fine powder
2. In a bowl, mix together all of the spices and cracker powder
3. In another bowl, whisk an egg
4. Dip the chicken breast in the egg mixture and then the spices mixture
5. On a heated pan with coconut oil,
Fry both sides for total of 20-25 minutes on medium-low heat until chicken is cooked

Today I finally used my beautiful @lecreusetau ramekins and set up a lolly platter🙊 I have the metallic set that are the perfect size and a couple of the bigger sized ones in duck egg blue. I havent had time to make a dessert and I just wanted to use them already so I put my 3kg of @sweetsshoppe.com.au lollies to use haha!
I often get asked how I can eat so many lollies🤣🤣 ok so I dont eat them all myself Lol. Like today, I had visitors so I had the lollies out for all to help themselves. And I give so many away when people visit, I'm like a forever party supplying party bags on their way out🤣 I do, however start with my favourites and then by the time they're finished I am over my sugar fix and slowly have one here or there🤷♀️ I do feel like I'm cheating on my chocolate and ice cream obsessio with lollies though🙈 im obsessed with sour lollies! Hubby is opposite and loves chicos so we never fight over lollies 😋 my daughter isjt a fsn of lollies 💃not complaining that's for sure!

There are so many reasons our plan works for so many people. After completing the programme myself I stopped having the migraines which were affecting my life drastically!
