Blackened Shrimp Avocado Burrito Bowls are the perfect way to ring in the New Year with big bold flavor and a healthy meal! These are packed with blackened shrimp, brown rice, corn, black beans, and avocado. They are also great for meal prep!
1 pound large shrimp, peeled and deveined
1 Tablespoon Chili Powder
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon cumin
½ teaspoon garlic powder
1 teaspoon salt
¼ teaspoon pepper
2 Tablespoons olive oil, divided
1 can corn
1 can black beans
2 cups brown rice, cooked (I used a brown rice quinoa blend)
2 avocados, sliced
Greek Yogurt Avocado Cilantro Ranch:
¼ cup chopped cilantro
¼ cup greek yogurt
1 garlic clove
3 Tablespoons olive oil, add more for smoother consistency
½ teaspoon salt
¼ teaspoon pepper

Burger for lunch today.
I've come a long way... I'm a total sauce girl. (I may have cried once when my husband forgot sauce with my drive thru order.)
Even being good on paleo in the past, I've used a little regular mayo or ketchup here and there.
But today, I flavored my burger with lots of spices. There was also onion, jalapeno, and mushroom mixed in to the meat. Then with each bite, I'd grab some mushrooms or avocado. So good!
It was a bit of an emotional experience for me (thanks, perimenopause). My little four cup food processor just wasn't cutting it and my mood has been a bit off the past couple of days (thus, the maca). After a little decompressing, hubby and I made a trip out and picked up a much needed new food processor (a Ninja Ultra Prep, on sale at Target....very cool). And just like that, all of these superfoods were turned into delicious energy bites!

Lazy meal! Saturday’s the last thing I want to do is cook so I try to keep something convenient and somewhat healthy to quickly heat up. .
I have an organic bean and cheese burrito, kale chips (struggling lately to get all my veggies in) and some black olives!!
