  • So I’m slightly obsessed with slow roasted meats, vegetables, and sauces that take forever to make... For years, I’ve read every BBQ book out there, and have made it my mission to visit almost every single famous BBQ shop in America. Those that have followed throughout the years, have witnessed my visits to Fox Bros,Killens, Franklin, 4 Rivers, and on my last trip even a Tex Mex variation - Valentina’s! Between all reads and all the eats, I’d say I’ve gone through what feels like barbecue school. And finally, here’s my version, absorbed from the barbecue greats, dissected in my Flavor-Obsessed brain, and then recapitulated Maximum Flavor Style! ... all I can say is there’s a magical blend of Pecan Wood (which is sweet) and Mesquite ( which is bold and robust) !

但印尼人很喜歡將雞蛋烚熟,然後黏上少許蛋白🥚,炸至金黃色💛,放入巴東牛肉內煮數分鐘,即成一美味印尼菜式🤗🤗 ⭐材料 :
牛𦟌🐂 1300克
巴東牛肉醬 1包
紅花椒 1隻
豆蔻 8粒
紅蔥頭 6粒
蒜頭 1個
薑 56克
南薑 42克(分2份)
香茅 4條
檸檬葉 4片 ⭐牛𦟌醃料 :
甜豉油 3湯匙
椰糖 28克
油 2湯匙 ⭐調味料 :
鹽 1/4茶匙
甜豉油 2湯匙
椰汁 200克 ⭐做法 :
1. 牛𦟌洗淨,燒水一鍋,待滾將牛𦟌等放下,出水2-3分鐘,取出再用清水洗淨,切中大件。抺乾水份加入醃料醃30-45分鐘,待用。

2. 將剩下的材料洗淨,蒜頭、紅葱頭去衣,薑刮去皮切片,南薑取一半去皮,切片,紅花椒切粒。將以上所有材料放入攪拌機打碎,取出。另一半南薑切片拍鬆,香茅拍鬆及檸檬葉,待用。

3. 燒油56克至略滾,放下打碎材料用慢火炒至香味溢出,再下剩下材料,如果油不夠要逐少添加。

4. 加入牛𦟌等,轉大火炒勻,加滾水至牛𦟌面,轉中火炆約半小時,關火,焗30-45分鐘。

5. 吃時翻熱,炆多15-20分鐘至腍,下椰汁、甜豉油及鹽試味,開大火,將汁收至濃稠,即成。

小貼士🤩🤩 :
1. 巴東牛肉醬在印尼店鋪有售,如果不用醬料,可以多加其他材料。
2. 翻炆牛𦟌時如水份不夠,要加水,不然容易煮焦。
3. 牛展用澳洲和牛牛𦟌,也可以選用美國急凍牛肋條。 ⭐香港島門市:
