  • Nothing like a solid 11 hour flight to Bangkok, to be greeted by flight attendants running us from one side of the airport to the other, followed by a screaming baby filled jet to Koh Samui, lost luggage (yep another lot) to start a retreat with.. lols. V grateful to be surrounded by palms finally on the island of Koh Samui for retreat life. Pictured, a non-retreat dish.. butternut squash pasta, pesto, crushed nuts, shit load of sprouting herby goodness @sproutedkitchen. As per, check stories for food/retreat photos .. ✌🏼 🌿🌿

🥙Bowl de Atún al Mango🐟
⠀⠀⠀⠀⠀⠀⠀⠀⠀
‼️Hoy hice una combinación del Ceviche de Atún al Mango con Granos Ancestrales, para comerlo tipo “Bowl”‼️
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Para el Ceviche:
🐟Atún Fresco @atundolores
🍑Mango
🥒Pepino
💜Cebolla Morada
🌱Cilantro
⠀⠀⠀⠀⠀⠀⠀⠀⠀
👩🏻‍🍳
- Cortar el atún semicongelado en cubos chicos y dejar marinar en salsa tamari, vinagre de arroz, aceite de ajonjolí y limón.
- Cortar mango, pepino y cebolla en cuadritos. Picar cilantro.
- Aderezo: Yogurt natural sin azúcar @danonemx, chipotle y sazonador vegetal @hechoparalavida.
- Arroz Ancestral

  • This is a beautiful bowl of food. Quinoa that is adorned with the flavors of the Mediterranean and then drizzled with a piquant vinaigrette. I eat it just like this,  but some leftover chicken or shrimp would also be delicious with this recipe. It’s one of my “go to” lunch bowls and I’ve posted the recipe below! ☺️

Mediterranean Quinoa Bowl with Honey Lime Vinaigrette 
Ingredients
Makes Two Bowls
1 cup quinoa, rinsed
1 ½ cups water
1 tablespoon of salt
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh Italian parsley
1 lime, juiced
2 tablespoons honey
1 teaspoon Dijon mustard
¼ cup extra virgin olive oil
1 tablespoon white wine vinegar
Salt and pepper to taste 
¼ cup sun dried tomatoes, chopped (use the jarred sun dried tomatoes in olive oil)
¼ cup diced or sliced cucumbers (or more if desired)
¼ cup marinated artichoke hearts (or more if desired)
¼ cup seedless Kalamata olives
¼ cup crumbled feta cheese 
Directions
Rinse the quinoa under cold water until it runs clear. This will keep the quinoa from tasting 
bitter. 
Add the quinoa to a pot and then add the water and one tablespoon of salt. Stir and then heat to a boil, turning it down to a simmer. Cover with a lid and let it cook for about 10-15 minutes. 
Take it off the heat and let it sit for another five minutes. Fluff with a fork and then stir in the 
fresh mint and Italian parsley and chill in the refrigerator for about 30 minutes to an hour. 
To make the vinaigrette, whisk together the lime juice, honey, mustard, olive oil, white wine 
vinegar. Season to taste with salt and pepper. 
To assemble the bowls, divide the chilled quinoa into two bowls. Top each bowl with sun dried tomatoes, cucumbers, artichoke hearts, Kalamata olives and crumbled feta. Drizzle with the vinaigrette and serve.
